Poached eggs are a revelation when cooked in the microwave, so we thought we'd give hollandaise sauce a try and complete this brunch favorite. Turns out it’s incredibly easy to make a velvety emulsion of butter, lemon juice, heavy cream and egg yolks with your microwave and an immersion blender. Layer an English muffin, Canadian bacon, poached egg, and a drizzle of hollandaise for a decadent start to your day.
